Ingredients
  • 200g FODMAPPED Green Curry Simmer Sauce200g = 1 pack
  • 2-3 Salmon fillets
  • 60ml Coconut Milk
  • 1 Limejuiced
Salad
  • 300g Green Paw Pawshredded
  • 1 Ruby Red Grapefruitsegmented
  • ½bunch Mint leaves
  • ½bunch Coriander leaves
  • 1long Red Chillifinely sliced
  • 1 Carrotgrated
Dressing
  • 2tbsp Fish sauce
  • 1tbsp Mirin Vinegar
  • ¼cup Coconut Water
  • 2tsp Sesame Oil
Instructions
  1. Preheat the griddle pan for 2 minutes on a medium heat start timer
  2. Place the salmon fillets into a large snap lock bag with half the FODMAPPED Green Curry simmer sauce, coconut milk and lime juice. Shake to combine and allow to marinate in the refrigerator up to 4 hours. start timer
  3. Combine all the salad ingredients in a large bowl and toss well. Set aside until required.
  4. To make the dressing, whisk together the remaining FODMAPPED Green Curry simmer sauce, fish sauce, mirin vinegar, coconut water and sesame oil. Set aside until required.
  5. Remove the salmon from the marinade and allow to drain. Cook the Salmon fillets on the pre-heated griddle pan 3 -4 minutes each side until cooked the way you like it. start timer start timer
To serve
  1. Dress the salad and arrange evenly onto individual serving plates, top with the cooked salmon and garnish with coriander leaves and lime wedges.
Recipe Notes

Salmon maybe replaced with another thick fleshed fish or chicken fillets.
